While many might think all cinnamon is created equal, the reality is that the spice aisle presents a choice, most commonly between Ceylon Cinnamon vs Cassia cinnamon. Cassia, often simply labeled as “cinnamon,” is derived from the Cinnamomum cassia tree and other related species. What is the Main Difference?

The main difference lies in their chemical composition and origin.

  • Ceylon Cinnamon (True Cinnamon): Native to Sri Lanka. It is rare, expensive, and harvested from the delicate inner bark of the tree. It has a sweet, floral aroma and is soft enough to break with your fingers.
